my plate always has room

I will be starting cooking classes in my kitchen this week....
It has come to my atttention that there are some simple skills that need to be taught to some of my dear friends, so I must do it!
This week's lesson:
Roasting poultry
I figure if I have it mastered, anyone can do it!
